Chocolate brioche pudding

This is an indulgent twist on the classic bread and butter pudding. It's quick and easy to make, comforting just like the classic version and the chocolate makes it heavenly.

It's a great family dessert but to make it a little more impressive for guests, use a pastry cutter to create rounds of the pudding and serve sprinkled with icing sugar and scoop of clotted cream.

Preparation Time: 10 minutes plus 15 mins standing time
Cooking Time: 25-30 minutes
Makes: 6 servings

50g butter
1 pack chocolate brioche rolls (approx 300g)
2 eggs
1 tbsp vanilla extract
50g caster sugar
125ml double cream
125ml whole milk

Pre heat oven to 180C or 160C for fan ovens and grease a shallow baking dish with a little butter.
Slice the brioche rolls in half length ways and lightly butter.

Lay the brioche butter side up in the baking dish, squishing them in quite tightly.

Place the eggs, cream, milk, vanilla essence and sugar in a bowl and whisk together to form a creamy consistency.

Pour the mixture evenly over the brioche.
Leave at room temperature for at least 15 minutes to allow the brioche to absorb the liquid.

Place the dish in oven and cook for 25-30 minutes, until the top is golden brown.
