Melt butter in a saucepan large enough to mix all the ingredients.
Mix in cocoa.
Remove from heat and stir in sugar
Add eggs and beat well using a wooden spoon
Sift flour and baking powder into the mixture
Add vanilla essence and mix to combine
Pour into a greased 20 x 30 cm sponge roll tin
Bake at 180 degrees Celsius for 25 to 35 minutes or until brownie springs back when lightly touched.
Cut into squares or triangles while still warm
To serve you could
Ice with chocolate icing
Dust it with icing sugar through a sieve
Serve it with vanilla ice cream
Drizzle with raspberries and syrup
These brownies can be kept in an airtight container in the fridge for a few days so you can make ahead. When you feel like having them just pop them into the microwave for a few seconds and have it with ice cream or cream. Delicious and ready in minutes!
