Chocolate Cheesecake

While I was writing this recipe, I was reminded to how disgusted I was at the thought of Philadelphia making a chocolate flavoured cream cheese. Now I have come to realise that it is not that different than making a chocolate cheesecake, and since I absolutely love this chocolate cheesecake, I am tempted to give the Philadelphia chocolate cream cheese a try. I wouldn't use it for this recipe, however, as you get the best flavour from dark chocolate. Based on the brands I used, each slice is about 206 calories.

Preparation Time: 40 minutes
Cooking Time: 30 minutes
Makes: 8 servings

Ingredients
150g muesli
50g light margarine
75g dark chocolate
235g cottage cheese
150g plain yoghurt
50g dark brown soft sugar
2 large eggs
1 tbsp vanilla extract

Method

Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.


Melt the chocolate over a pan of boiling water.
Beat the eggs with the sugar.



Mix the cottage cheese and yoghurt together, then beat in the eggs.
Divide the mixture into two bowls.



Add the vanilla extract to one bowl, while in the other, stir in the chocolate.



Blend the muesli and margarine in a food processor and line the mixture in a tart tin.



Pour the vanilla mixture over the base, then pour the chocolate mixture on top in the centre.



Bake the cheesecake in the oven, then allow to cool.
