Ingredients ½ cup self-raising flour
½ tbsp coconut sugar
1 small egg, slightly beaten
90 g milk
25 g butter
Less than ¼ cup chocolate chips -I used dark chocolate
3 rashers shortcut bacon
Maple syrup for topping
Mix the flour and sugar together.
Add in half the egg (I used the largest size egg) and the milk, adding a little at a time until the batter is smooth.
Add the chocolate chips.
Put the bacon in a non stick small frypan and cook for about 5 - 10 minutes
Meanwhile heat a heavy non stick frypan and put a bit of butter in, and then pour half the mixture into the pan.
When you start to see bubbles on the surface, turn over the pancakes and cook till slightly brown on the other side.
Dob some butter onto each pancake.
Top with the bacon and pour as much maple syrup over this as you wish.
I had some beaten egg left over so I also made a small omelette with this.
