Chocolate Croissant Bread and Butter Pudding

This luxury twist on bread and butter pudding is heavenly for those with a sweet tooth and love of comforting puddings. It's certainly not light on calories but as a treat, it's absolutely delicious.

Preparation Time: 15 minutes
Cooking Time: 25-30 minutes
Makes: 8 servings

200ml milk
200ml cream
1 tsp vanilla essence
120g caster sugar
3 eggs
7 croissants, day old works best
7 tbsp chocolate spread
50g chocolate chips

Pre heat oven to 180 or 160 for fan ovens.
Gently bring the milk, cream and vanilla essence to a simmer and then remove from the heat.
Whisk the egg and sugar in a bowl for about a minute.
Add the warm cream and milk to the egg and sugar and whisk into a smooth custard.

Cut the croissants in half and cover one side with chocolate spread.

Lay the croissants in baking dish, chocolate spread side up. Pack them quite tightly.

Sprinkle with chocolate chips and then pour the custard mixture over.

Bake in oven for 25-30 minutes, until top is golden and springy.
