Chocolate Flaxseed Pudding

At the moment everyone is raving about chia pudding. But it's an overnight thing. I've created a pudding with flax seeds and it only takes a few hours and just like chia pudding it's nutritious and delicious.

Flaxseed pudding topped with almonds and ready to eat

Preparation Time: 5 minutes
Cooking Time: 1-2 hour set time in fridge
Makes: 2 puddings

Ingredients
4 tbs flaxseeds
1 cup of almond milk
2 tbs raw cacao
2 tbs agave nectar
Slivered almonds to top or any fresh fruit slices you like such as banana.

Method
Grind flaxseeds in a mortar and pestle or for an quicker way use a blender

In a large saucepan combine almond milk and raw cacao and bring to the boil
Add in flaxseeds and stir continuously to avoid lumps (Approximately 2 minutes)

When it starts to thicken add in agave nectar and stir through
Pudding should now be nice and thick, take it off the heat and give it a good stir
Pour mixture into 2 serving glasses or bowls

Place pudding into the fridge, check it after one hour to see if it is set. I made mine and had to go out so it was in the fridge at least 5 hours and it was definitely set and ready to eat.
This pudding is simple and sort of a no fail recipe as the pudding doesn't need to be stirred every half hour like chia pudding, and there is not chance of it being crunchy. Change the raw cacao for half a mashed banana and top it with lots of your favourite fruits and nuts and it can become your favourite breakfast food.

Are you sure about 4 tablespoons of ground flax seed? I made this yesterday and it came out like a rock... Had to throw it out. I love the idea of this recipe, and wish it were edible! Maybe start with only one tbs ground flax?
