This is super simple to make and is oh - so - delicious. The minty flavour is quite palate cleansing, making the mousse the perfect way to end a meal.
I won't make any claims that this is a "healthy" dish, however, you can feel less guilty about eating this dessert as it contains no processed sugar and the ingredients have some great health benefits.
Cacao powder contains flavonoids, which act as natural antioxidants and protect the body from disease and ageing. Fresh mint helps with indigestion, stomach pain and nausea and avocado has anti-inflammatory properties and anti-cancer benefits.
Preparation Time: 5 minutes
Makes: 2 servings
Ingredients 1 avocado
2 tbsp cacao powder (or substitute cocoa powder)
1 tbsp honey
Handul fresh mint leaves
1 tbsp water (more or less)
1/2 tsp salt
Baby mint leaves, for garnish
Peel, then roughly chop the avocado and place in a blender. Add the cacao powder, honey, mint, water and salt and give the blender a whiz.
If, like me, you own a blender of rather poor quality, it may take some time for the mixture to properly combine. Feel free to add a little more water to smooth out the mixture.
Serve immediately, with baby mint leaves as garnish, or keep in the fridge for up to a few days. We kept the mousse in the fridge for a few hours and it was then delicious and cool when served.
I tried this last night topped with mixed berries, and it was so decadent and rich I love it! Thanks for sharing this recipe. I did struggle a bit trying to blend everything in my poor quality blender so I blend them in my food processor instead and the result was smooth and creamy.
