This is simple fudge recipe. Because it's made with chocolate and icing sugar it means you don't need to worry about things like sugar thermometers and graining temperatures. The orange zest stops it from being too, too sweet. It would be really lovely to make as a gift, wrapped in little cellophane bags.
Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 24 - 36 servings (depending on how small you slice them!)
Line the base of a baking tray with greaseproof paper. It should be about 7 inches square, but you can use a rectangular one of roughly the same size.
Break the chocolate into pieces and place it and the butter in a bowl set over a saucepan of barely simmering water. Stir occasionally until it melts and is combined with the butter into a smooth mixture.
Remove the basin from the heat and add the grated orange rind and the evaporated milk. Mix it all together.
Gradually sift the icing sugar into the bowl and beat it into the chocolate mixture. It will be quite stiff, but smooth, when it is fully combined.
Spoon the mixture into the pre-prepared tin and make sure it is level. Rough up the surface a little to give it a hand-made fudge look.
Chill for a few hours, then turn out of the tray and cut up into small squares.
