Chocolate Peppermint Slice

I've tried this recipe a few times and everytime I try it the icing sugar doesn't set right. Essentially, it's fine until I have to take it out of the fridge, and then the icing becomes more gooey. It still tastes good but it is messy.

With this attempt, I melted the chocolate and everything seemed to be going fine until I tried putting the melted chocolate on top of the cold biscuit base and icing, where it solidified too quickly.

Preparation Time: 30 minutes
Freezing Time: 30 minutes
Serves: 24 pieces

Ingredients:
250 gm plain chocolate-flavoured biscuits
150 gm butter, melted
2 cups (250 gm) pure icing sugar, sifted
1 teaspoon peppermint extract
50 ml milk, approximately
200 gm dark chocolate, roughly chopped
1 tablespoon oil

Method:
Line a 20 X 30cm slice tin with baking paper
Put the biscuits in a food processor and blend until finely chopped.
Combine the biscuit crumbs and melted butter and press evenly into the slice tin. Place the tin in the freezer while preparing the topping

In a bowl, mix the icing sugar, peppermint extract and milk. The mixture should be spreading consistency. Spread the icing over the hardened biscuit base and return to the freezer

Place the chocolate in a heatproof bowl over a saucepan of simmering water ensuring the base of the bowl doesn’t touch the water. Stir until melted, then stir in the vegetable oil

Spread the chocolate mixture over the slice and set aside for 10-15 minutes to harden. To serve, cut into 5cm squares with a hot knife. Store in airtight containers for up to 3 days.
