I found this chocolate pudding recipe at a
Green & Black's stall while at the Chocolate Unwrapped event last year. These puddings are absolutely divine; they melt and crumble in the mouth at the same time. I'm not a huge fan of
Green & Black's chocolate, so I used Belgian chocolate instead; as long as it is 70% dark chocolate, then it shouldn't matter which type you use. Based on the brands I used, each pudding is about 334 calories.

Makes: 6 servings
Ingredients
250g dark chocolate
50g margarine
50g Xylitol sweetener (or caster sugar if you prefer)
25g self-raising flour
25g cocoa powder
300ml light soya milk
2 large eggs
Method
Pre-heat the oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Melt the chocolate with the milk in a saucepan.
Cream the butter and sugar together.
Separate the eggs and beat in the yolks.
Mix the flour and cocoa powder together and beat into the mixture.
Stir in the milk chocolate mixture.
Whisk the egg whites and fold in.
Pour the mixture into ramekin dishes and put them in a roasting dish.
Fill the dish three quarters of the way up with water and then bake in the oven.
