Chocolate Simplicity Cake

This cake is simple to make. It uses basic ingredients you are likely to have in the pantry and the cake is budget friendly. It is a lovely moist cake suitable for afternoon tea.

Preparation Time: 10 minutes
Cooking Time: 30 to 35 minutes
Makes:8 servings

Ingredients
1 cup SR flour
3/4 cup sugar
1/2 cup milk
3 tablespoons margarine
2 level tablespoons cocoa powder
2 large eggs, beaten
1/2 teaspoon vanilla essence


Method
Sift the flour and cocoa powder into a large bowl.

Add sugar.
Combine eggs, vanilla and milk and add to dry ingredients.
Melt margarine and add to the other ingredients.
Beat well for 2 minutes by hand or using electric beaters for 1 minute.

Pour into a greased round tin, lined with greaseproof paper

Bake in moderate oven for 30 to 35 minutes
Test with skewer.
Allow to cool for a few minutes and remove from the tin.

When cool, ice with chocolate icing

Hi Marie, a recipe for the chocolate icing would be helpful, saving me trying to look for one... Recipe looks quick and easy, just what I need.

Marie, Could you leave out the cocoa for a plain cake?

Yes you could leave out the cocoa for a plain cake. I would suggest adding two level tablespoons SR flour extra to replace the cocoa powder so the mixture isn't too runny. If the cake tastes bland you may want to add extra vanilla essence.
