Chocolate Sorbet Without Ice Cream Maker

Chocolate Sorbet
Chocolate Sorbet made without an ice cream maker is delicious.

This chocolate sorbet is indulgent, easy to make and does not require an ice cream maker. Serve by itself or top with your favourite ice cream toppings. Replace the vanilla essence for peppermint essence for a chocolate mint sorbet.

Preparation Time: 7 hours
Cooking Time: 7 minutes
Serves: 1

1 1/4 cups water
1 cup cocoa or cacao
1 cup sugar (or stevia)
1 tsp vanilla essence
Pinch of salt

Whisk 1 cup of water, cocoa, sugar and salt in a saucepan and on medium heat for 2 minutes to combine.

Stirring the cocoa, sugar and water will prevent chunks of cocoa forming

Increase the temperature to medium - high and continue whisking until the chocolate mixture just boils. Take the mixture off the heat and pour into a bowl.

The chocolate mixture will have a nice glossy look when combined.

Add remaining water and vanilla essence to the chocolate mixture and whisk vigorously for 2 minutes to combine.

Cool the mixture in the refrigerator before placing in the freezer.

Place in the refrigerator for 1 1/2 hours. The mixture should be cold. Refrigerate for an extra 1/2 hour, if required.
Put mixture in the freezer for 2 hours. Break the mixture up with a fork and then blend to break up the ice crystals, about 1 minute. Transfer to the freezer for 2 hours.

Break up ice crystals with a fork before blending.

Blend until the mixture is smooth, place in a loaf tin and freeze for 1-2 hours until set.
Serve by itself or top with your favourite ice cream toppings.

Mix in chocolate chips before placing in the freezer for the last time.
Suggested toppings include raspberries, strawberries, crushed nuts, chocolate buttons, chocolate sauce and salted caramel sauce.
