Chocolate Souffle

This yummy chocolate souffle is easy to prepare and a great recipe for beginners who want to do something fancy.

The resulting souffle has a light, fluffy and airy texture with a delicate chocolate flavour.

Preparation Time: 20 minutes
Cooking Time: 10 minutes
Makes: 4 servings

50g chocolate
3 egg whites
2 egg yolks
2 tablespoons cornflour
2 tablespoons caster sugar
12g butter
1/2 teaspoon vanilla essence
Pinch of salt

Preheat oven to 200 degrees celsius.
Brush the inside of 4 ramekins with melted butter and sprinkle caster sugar inside to coat bottom and sides.
Tap out excess sugar.
Melt the chocolate and the butter in a microwave.
In a separate bowl, beat the egg yolks with vanilla essence.
Add cornflour and mix well.
Add the melted chocolate into the egg yolk mixture and mix well.
In a separate bowl, whisk egg whites with the caster sugar until stiff peaks form.
Gently fold the egg whites into the chocolate mixture.
Spoon the souffle mixture into the prepared ramekins.
Bake in the oven for 10-12mins. The souffle will rise. You can check if it's done by sticking a toothpick inside and if it comes out clean, it is done.
Remove from the oven and serve immediately.

Enjoy your souffle with ice cream, fruit or just dusted with icing sugar.
