Chocolate-Swirled Energy Slice

Nutritious energy slice - plus chocolate!

This slice is made from healthy, sustaining ingredients - oats, coconut, dates and eggs - with enough chocolate to make it special.

A nourishing breakfast-on-the-go or lunch box snack.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 16 servings

1 cup dried dates
75g butter
2 eggs
1 cup desiccated coconut
2 cups rolled oats
1 1/2 tsp cinnamon
1/2 tsp baking powder
50g dark chocolate, room temperature.

Heat the oven to 180 degrees Celsius and grease or line a square cake tin.
Place the dates in a heatproof jug or bowl and cover with water. Microwave on high for 1 minute or until simmering. Drain the liquid and discard (or save for bircher muesli!)
Soften the butter in the hot dates.

Add the dates, butter and eggs to a food processor and blend until smooth.
Add all the remaining ingredients except the chocolate. Blend until well combined.
Break the chocolate into chunks and pulse in the food processor. The hot ingredients should make it soften and spread through the mix. (If not, chunks are fine too.)
Pour into the tin and press down to smooth.

Bake for 18 to 20 minutes, until turning golden.
