Want a change from the same old Sunday eggs on toast? Liven up your morning with this tasty toast topping!
This is a great breakfast for people who don't like eggs or if you just want something a little bit richer. You can use spicy or mild chorizo but I prefer the spicy. It's best served atop a nice thickly sliced, good quality bake house bread like a sour dough or ciabatta (or homemade!).

Makes: 2 servings
Ingredients
1 chorizo sausage
1 red oinion sliced in thin wedges
8 cherry tomatoes quartered
200 g your favourite feta (I used Danish)
handful of mixed salad leaves
2tbs balsamic vinegar
1tbs olive oil for frying
4 slices of good quality bread
Method
Chop the chorizon into thick cirlces and then chop in half again. Slice the red onion into thin wedges and the cherry tomatoes into quarters.
Heat the oil in a frying pan on medium heat then add the chorizo and onion and fry for about 5 minutes, turning the pieces over as they brown.
When chorizo is almost cooked and onion has softened add in the cherry tomatoes and cook briefly, stirring for about a minute (longer if you want them softer but I like mine to have just touched the pan really).
Remove from the heat and put aside to cool for about 5 minutes.
Toast your bread and top it with some mixed salad leaves.
Crumble the feta into the chorizo mix and add the balsamic vinegar. Stir gently.
Pile chorizo and feta mix ontop of the salad leaves. Drizzle with balsamic if desired for serving.
