Chow Mein

Our family has been making this recipe for as long as I can remember. It is a favourite! There are many different versions to this much loved recipe but this one is my favourite.



Preparation Time: 15 minutes
Cooking Time: 40 minutes
Makes: 6 servings

Ingredients
1 brown onion, diced
500grams mince beef
1 pkt chicken noodle soup, dry mix
2 cups water
1 cup green beans, chopped
2 celery stalks, diced
1 carrot, diced
1/4 cabbage, shredded
2tsp curry powder
Cooked rice for serving



Method
Heat some oil in a pan over a medium heat.

Add the onion and cook until it is translucent.



Add the mince and cook until brown.



When the mince is brown add the chicken noodle soup and water. Bring it back up to a simmer.

Add the carrot, beans and celery. Cook for five minutes.



Stir in the curry powder.

Stir in the cabbage. I like to leave it on top of the mix for 5 minutes to allow it to wilt, which makes it easier to stir through.



Cook for 20 minutes or until the vegetables are cooked. This is a good time to get your rice cooking.

When cooked serve on top of the rice. Delicious!
