This jam is beautifully balanced with sweet, sweet peaches and Christmasy spices. Give this festive jam as a gift but make sure you keep a jar for yourself, it will be the best peach jam you ever have.
Ingredients 1 cinnamon stick (or 1 tsp of powder)
Juice of one lemon
1⁄2 teaspoon ground cardamom
1/2 teaspoon ground ginger
2.5 - 3 cups of sugar
2 star anise
1.2 kgs of peaches - about 20
Peel and core the peaches. If they are quite firm blanch first. If they are soft and juicy the skin will peel off easily.
Place the peaches, sugar and spices in a heavy large pot and stir. If adding broken star anise (like me) make sure you count them and fish them all out at the before blending.
Bring to the boil over a medium-high heat. Boil, stirring occasionally of 15 minutes, adjusting heat as necessary to maintain an even boil.
Pick out the star anise (a cinnamon quill if using) and squish peaches with a masher or stick blender until you reach desired consistency. Boil an additional 5 to 10 minutes, stirring frequently, or until thickened.
Pour the hot jam into 4 sterilized 8-oz. jars. Carefully wipe jar rims; cover.
Decorate and label the jars and you have a beautiful homemade gift.
Jam will last 1 month refrigerated and up to 6 frozen.
