Cinnamon And Ginger Herb Roast Chicken

Roast chicken is my fall back. It's easy to get right because all you need to do is season, place it in the oven and baste.

Here's to make a perfectly cooked chicken, full of flavour and easy to please all who enjoy it.

Preparation Time: 5 minutes
Cooking Time: 1 hour 40 minutes
Makes: 6 servings

Medium sized whole chicken
Tsp ground cinnamon
Tsp ground black pepper
Handful fresh parley
Half a lemon
Thumb of grated ginger
Handful of fresh rosemary
2 garlic cloves
5 tblsp olive oil

Using a pestle and mortar, pulverise the ginger and garlic.

Season the meat with all of the ingredients. Stuff half of the seasoning inside the chicken to ensure the meat is full of flavour.

Ensure the meat is completely coated, drizzle with oil and place in the oven at 180 degrees for 1 hour and 40 minutes.

Halfway through cooking baste the meat.

Remove the chicken from the oven.

The meat should pull away from the chicken easily. Carve and serve.
