Cinnamon Apple Toasted Sandwich with Bacon and Peanut Butter

An unusual, tasty lunch

This toasted sandwich is packed with sauteed, slightly sweetened cinnamon apples and peanut butter.

Although slightly messy to eat, this toasted sandwich will please both children and adults alike.

Preparation Time: 10 minutes
Cooking Time: 8 minutes
Makes: 2 sandwiches

2 small apples
2 tbsp butter
1 tsp cinnamon
8 pieces short cut bacon
2 tsp brown sugar or coconut sugar
cup water
tsp vanilla
4 slices bread -preferably wholemeal
5 tbsp peanut butter

Brown the bacon. I did this in the microwave between sheets of paper towel. I always like to use "short cut" bacon as this has little fat on it however any bacon would work.

Wash, core and cut the unpeeled apple into thin slices.

Cut to about 5 cm thick

In a frypan, put 1 tablespoon butter, then add cinnamon, brown sugar and water, and stir to combine.

Add the apples and ensure they are coated in the liquid mixture.

Coat apples

Cover the pan, and simmer the apples for about 4 minutes, stirring occasionally. The apples should be slightly soft but still crisp.

Do not overcook at this stage

Add the vanilla to the pan and mix the apples.

Remove the apples to a plate and leave any liquid in the frypan.

Apples should now look like this

Melt another tablespoon of butter in the pan.

Spread some of the peanut butter on one side of each piece of bread.

Put peanut butter on bread

Divide the apples in half and place each half on one piece of bread. Add bacon.


Put the remaining two pieces of bread, peanut butter side down, on top of the bacon. Cook the sandwiches over medium heat until brown.

Cook 2-4 minutes each side


A good way of getting kids to eat apples

For a vegetarian version of this toasted sandwich, leave out the bacon, it is still delicious.
