Cinnamon Banana French Toast

A sweet, delicious, and fruity brunch that is perfect for a lazy Sunday morning.

Preparation Time: 10 minutes
Cooking Time: 10 minutes
Makes: 2 servings

2 eggs, lightly beaten
2 tablespoons milk
1 teaspoon ground cinnamon
1/2 teaspoon vanilla essence
4 slices of bread (any kind, but the thicker the better)
1-2 bananas, sliced
Icing sugar, to dust
Golden syrup, to serve


In a shallow dish or bowl, whisk together the eggs and milk.

Add the cinnamon and vanilla and whisk together.

Place the bread slices into the mixture until the mixture soaks into one side of the slices. Flip them over and soak the mixture into the second sides of each piece.

Heat butter (or canola spray) in a frying pan on medium heat.

Place the slices into the frying pan. Cook for 3-4 minutes, or until golden brown on the bottom side. Flip, and cook the other side until golden brown.

Place 2 bread slices onto each plate. To serve, top each plate with sliced bananas, a sprinkling of icing sugar, and a drizzle of golden syrup.
