Classic Coleslaw

Talk about a classic, coleslaw is a huge favourite that's been served for years. Its made a huge comeback now being served in a whole host of ways.

I've experimented with adding juices like apple and pineapple to the dressing or using fennel as well as cabbage. See Pork Fillet WithToffee Apple Slaw

Preparation Time: 5 minutes plus 1 hour to rest
Cooking Time:0 minutes
Makes: 4 servings

Ingredients
1/3 green cabbage
1/3 purple cabbage
1 carrot
2 spring onions
100 ml mayonnaise
2 tbsp. yogurt
1 tsp sherry vinegar
Salt and freshly ground black pepper to taste

Method
On a mandolin slice the cabbage on the thinnest setting, grate the carrot and slice the spring onion.



Ingredients

Combine the remaining ingredients in a bowl and mix. Correct the dressing's seasoning.
Place the vegetables in a bowl and mix to combine. Add 3/4 of the dressing and toss through the cabbage mix. Taste the salad and add more dressing if too dry.
Leave in the fridge for an hour to rest. This is important so the salad becomes soft and the flavours combine.
