Classic Egg Salad

A good egg salad can be a meal on it's own, or, you can use it as a filling for delicious sandwiches or canapes.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Serves: 4

Ingredients
6 - 7 eggs
1/4 cup whole egg mayonnaise
1/2 cup celery, diced
2 tsp lemon juice
1 tbs onion, finely diced
salt and pepper, to taste
lettuce, to serve

Method
Place the eggs in a saucepan and cover with water. Bring to the boil, then simmer for 8 minutes. Remove the eggs and place into a bowl of iced water to cool.

Once the eggs have cooled, peel and then dice them. Place them into a bowl with the mayonnaise, celery, lemon juice and onion.

Stir to combine, adding salt and pepper to taste.
On a serving plate, create a bed of lettuce before placing the egg salad on top.

Note: I like to reserve an egg to use as a garnish.
