Classic Scones

Scones are a classic that aren't out of place at a picnic, morning, afternoon tea, or even a high tea. They are terrific straight from the oven with jam and cream.

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Serves: 10-12

Ingredients
3 cups SR flour
80 g butter, cubed, room temperature
1 cup milk
1/4 cup milk, additional for basting
Jam, to serve
Cream, to serve

Method
Preheat the oven to 200C and line a baking tray with paper.
Place the flour into a bowl with the butter. Using your finger tips, gently work the butter into the flour until the flour resembles fine bread crumbs.
Make a well in the centre of the flour and add the milk. Mix with a knife until a soft dough forms. You may need to add a little more milk if the dough is too dry.
Place the dough onto a lightly floured board and gently knead until smooth (do not over work the dough).
Pat the dough down into a 2cm high circle. Using a circle cutter or the top of a glass, cut out as many circles fit.

Press any remaining dough together and continue cutting out the remaining scones. Repeat until all the dough has been used.
Place the scones onto the baking sheet 1cm apart.
Using a basting brush, lightly brush the tops of the scones with a little bit of milk before placing them in the oven for 20 - 25 minutes or until golden and well risen.

Best served warm.

The best scones are made from dough that has not been overworked. Make sure you knead your dough as little as possible to ensure the best results.
