Clotted Cream Rice Pudding

I love the traditional, old school puddings; they're so simple, delicious and comforting. The addition of clotted cream makes this rice pudding a little more indulgent for a treat.



Preparation Time: 5 minutes
Cooking Time: 2 hours
Makes: 4 servings

Ingredients
110g pudding rice
55g granulated sugar
1.2L whole milk
2 tbsp clotted cream
4 tsp clotted cream to serve


Method
Pre heat oven to 150C
Put the sugar, rice, clotted cream and milk into a lidded, oven proof dish.


Stir to mix the ingredients, then cover and put in the oven for one hour.

Take the rice pudding out of the oven, stir and then put it back in the oven for another hour, without the lid on.
The pudding will be golden on top but soft and creamy underneath.


Serve with a tea spoon of clotted cream on top
