2 cups plain flour
1/2 teaspoon salt
3/4 teaspoon baking soda
1 cup sugar
2 large eggs
1/4 cup butter, softened
3 ripe bananas, mashed
1/4 cup natural low-fat yoghurt
3 tablespoons dark rum
1/2 teaspoon vanilla extract
1/2 cup dessicated coconut, plus 1 tablespoon for sprinkling
1/2 cup icing sugar
1 1/2 tablespoons fresh lime juice
Preheat oven to 180 degrees.
Beat sugar and butter in a large bowl until evenly mixed. Add eggs one at a time and continue mixing until smooth.
Add yoghurt, banana, vanilla and beat until mixed through.
Add salt, flour, baking soda and walnuts. Beat at a low speed until mixed through.Stir in coconut.
Spoon mix into a greased 9 x 4 inch loaf pan and sprinkle with coconut. Bake for one hour or until golden and a skewer inserted into the middle of the loaf comes out clean. Cool in pan for 10 mins then remove from pan.
Mix icing sugar with lime juice until smooth and drizzle over warm loaf. Cool completely on a wire wrack and serve.
