Ingredients 1 cup of shredded coconut
1 cup of brown sugar
1 cup of wholemeal self raising flour (or white)
2 tsp of coconut oil (or olive)
1 cup of plain greek yogurt
1 tsp baking powder
3 limes, zest and juice
1 tsp vanilla essence
Place dry ingredients in a large mixing bowl. I don't worry about sifting and they always turn out lovely, Nigella style!
Finely grate the lime zest and squeeze the juice into the bowl.
Stir in the yogurt, vanilla essence and coconut oil.
Your batter should be light and fluffy.
Spoon into baking tray and sprinkle with extra coconut.
Bake at 180 degrees for 25 mins or until golden on top.
