Ingredients Base 1/2 C wholemeal flour
1/2 C coconut
2 TBSP agave
2 TBSP coconut oil
1/3 C agave
2 limes (juice of 2 and zest of 1)
1/8 TSP baking powder
3 TBSP wholemeal flour
1 TSP vanilla essence
2 TBSP Icing sugar or coconut for dusting
Preheat the oven to 180 degrees.
For the base mix coconut, oil, flour and agave in a bowl. Press firmly into a small lined baking tin and bake until golden brown. 10-15 minutes.
For the filling whisk the eggs then add the agave, lime juice and zest, flour and baking powder. Mix until smooth and pour over the base. Pop back in the oven and bake for another 10-15 minutes until the edges start to brown and the top is firm to the touch.
Dust with coconut or icing sugar and enjoy warm or cold.
Note: Store in the fridge for 1 week.
Lemons can be used instead of limes.
