Coconut Rice Parfait With Mango

This dessert is healthy to eat and easy to prepare, while still looking rather impressive. The combination of coconut cream, black rice and mango is a popular South East Asian influence. You can use black or white rice, or perhaps a combination of both. The beauty of this dish is that you can prepare it ahead of time and make the layers more elaborate if you prefer.

Preparation Time: 20 minutes
Cooking Time: 20 minutes
Makes: 2 servings


1 cup black (or white) rice
2 cups water
3/4 cup coconut sugar
1 fresh mango
400 mLs coconut milk
4 tablespoons coconut cream


Cook the rice in the water until soft. Stir in the coconut milk and coconut sugar while the rice cools. Once these three ingredients are well combined, spoon the rice into the base of two clear glasses. Add a layer of coconut cream.

Place mango in the base

Slice the fresh mango into thin pieces, and arrange a few pieces on top of the black rice and coconut cream to form layers. (Remember to save some mango slices to use as a garnish at the end.)

Carefully spoon some more black rice on top of the mango.

Finally, add a fresh mango (and tropical flower) garnish and serve warm or cool.
