Coconut Triangles

This is a delicious tray bake I discovered. The base is made from a rich pastry and topped with coconut meringue. Perfect for afternoon tea. Based on the brands I used, eac slice is about 225 calories.

Preparation Time: 20 minutes
Cooking Time: 30 minutes
Makes: 8 servings

Ingredients
75g margarine
125g Xylitol sweetener (or caster sugar if you prefer)
150g wholemeal flour
50g desiccated coconut
30g cashew nuts
20g glace cherries
2 large eggs
2 tbsp water

Method
Pre-heat the oven to 170 ༠C/ 150 ༠C fan/325 ༠F/3 Gas.
Separate the eggs and whisk the egg whites with 50g sweetener/sugar and coconut.
Chop the cherries and cashew nuts in half (lengthways).
Cream the margarine with 75g sugar and beat in the eggs and water.
Fold in the flour and spoon the mixture into a baking tray.
Pour the meringue on top and sprinkle the cashew nuts and cherries.
Bake in the oven, then cut into triangles.
