Coconut-Curry Noodle Soup

This is an adaption of one of my Dad's favourite recipes, the Boxing Day Curry. You can use any vegetables you have available, or even some chicken or prawns if you've got any.



Preparation Time: 5 minutes
Cooking Time: 15 minutes
Makes: 3 servings

Ingredients
1/2 brown onion, diced
2 cloves garlic, chopped finely
2 chillies, finely chopped
3 - 4 mushrooms, sliced
Small handful green beans, trimmed
Small handful broccoli, chopped into small pieces
400mL vegetable stock
1 400mL tin of light coconut milk
1 packet hokkien noodles
1 tbsp curry powder
1 tbsp butter or margarine

Method
Melt the butter/margarine in a large saucepan over a low heat.

Gently saute onion, garlic and chillies in the melted butter until onion is soft.

Add the other vegetables and gently saute for 2 - 3 minutes.

Sprinkle in curry powder and stir until vegetables are coated.

Pour in coconut milk and vegetable stock.

Add noodles, bring the saucepan to a simmer and leave for 10 minutes until vegetables are soft.

Serve and enjoy.
