Condensed Coconut Loaf

Although the description of condensed milk is not all that appetising (milk with all the water removed), when sweetened, it turns into a thick and delicious baking product. It was invented by the French confectioner, Nicolas Appert , who is known as 'the Father of canning'. Distressed by the death of several children due to spoilt milk, he came up with a way to make milk last longer in storage. Although it was originally made to improve health, it is now an indulgence that should be considered part of an every now and then treat.

Inspired by the coconut pyramids my grandpa used to make, this coconut loaf is very simple, containing only three ingredients, and is absolutely divine.

Preparation Time: 5 minutes
Cooking Time: 30 minutes
Makes: 1 loaf

Ingredients
120g desiccated coconut
120g glace cherries
240g light condensed milk

Method

Pre-heat oven to 180 ༠C/ 160 ༠C fan/350 ༠F/4 Gas.
Blend all the ingredients in a food processor for an oatmeal like consistency.

Pour into a loaf tin.

Bake.

I didn't put the calories, because I wasn't sure how many portions you'd get out of it at the time. It was about 10 slices, which was only 177 calories surprisingly. That's because I was using light condensed milk. Double it if your using ordinary condensed milk.
I notice you didn't put the calouries this time, as you usually do. They probably go through the roof with this one! Sounds really yummy though. Oh, really good quality glace cherries make a difference in recipes, as I've found. Will try this one sometime, as I have a spare can of condensed milk in the cupboard. c&c

Just simply chop the cherries very finely by hand, and make sure you combine all the ingredients thoroughly, and it should come out much the same.
