Cookie Dough Cookie Cups

Cookie Dough Cookie Cups are probably one of the most amazing recipes as it involves baking cookies in muffin cups and topping them with a light and creamy cookie dough icing. All I have to say is that they are simply delicious!



Preparation Time: 35 minutes
Cooking Time: 26-30 minutes
Makes: 24 servings

Ingredients

Cookie Cups
3/4 cup of unsalted butter, at room temperature.
3/4 cup of brown sugar.
1/4 cup of granulated sugar.
1 large egg, at room temperature.
2 teaspoons of vanilla essence.
2 cups of plain flour.
2 teaspoons of corn flour.
1 teaspoon of baking soda.
1/2 teaspoon of salt.
1 & 1/4 cups of semi-sweet chocolate chips.

Cookie Dough Icing
3/4 cup of unsalted butter, at room temperature.
1 & 1/8 cup of brown sugar.
2 teaspoons of vanilla essence.
1 & 1/4 cups of plain flour.
3/4 teaspoon of salt.
6 tablespoons of milk.
1 & 1/2 cups of chocolate chips

Method

Cookie Cups
Preheat the oven to 170 degrees C, making sure that the racks are near the middle. Line a 12 section muffin pan with muffin cups and set aside.

In a large bowl, cream together the butter, brown sugar and granulated sugar on medium speed until it is light and fluffy.

Add in the egg and vanilla and beat until combined. Scrape down the sides of the bowl when needed.



In a separate bowl, mix together the plain flour, corn flour and baking soda.

While beating on the lowest speed, add the dry mix to the wet ingredients slowly and beat until incorporated.

With a spoon, stir in the chocolate chips.



Press approximately 1.5 tablespoons of the cookie mixture into each of the muffin cups, this fills approximately 1/3 of the muffin cup.



Bake in the oven for 13-15 minutes. Remove them from the oven when the edges start to brown and the middle still appears to be soft.



Allow the cups to cool before adding the icing.

Cookie Dough Icing

In a large bowl, cream together the butter and sugar on a medium speed.
Add in the vanilla and beat until combined.



With a spoon, stir in the flour and salt until it is doughy.

Beat in the milk until the icing is fluffy.



Fold in the chocolate chips.



Frost the cooled cookie cups and ENJOY!
