Corn Mini Quiches

Here's a quick & easy mini quiches for kids' after school snack or breakfast for the family.



Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 6 servings

Ingredients
6 slices bread, crusts removed
butter, for spread
125g can corn kernels, drained
1/3 cup coarsely grated cheddar
4 eggs, lightly whisked
dried parsley leaves

Method
Preheat oven to 160C.

Use a rolling pin to gently roll out bread slices to 5mm thick. Brush each bread slice with the butter.



Line six capacity muffin pans, buttered-side down, with the bread slices. Arrange the corn and cheese evenly among the muffin pans. Pour the egg evenly among each pan.



Sprinkle dried parsley leaves. Bake in preheated oven for 15 minutes or until just set and lightly golden.



Remove from oven and set aside to cool slightly. Serve warm.
