Courgetti & Fish Balls

An Asian twist on an Italian classic.

Preparation Time: 40 minutes
Cooking Time: 25 minutes
Makes: 3 servings

Ingredients
180g sea bream fillets
70g prawns
60g celery
60ml soy sauce
1 tbsp honey
1 tsp mixed herbs
1 tsp ground black pepper
1 tsp apple cider vinegar
tbsp tomato paste
1 tbsp coconut oil
1 courgette
1 yellow pepper
60g spinach leaves
60g bamboo shoots

Method

Chop the celery and then blitz it in a food processor with the fish and prawns.

Roll the mixture into nine ping pong size balls.

Mix together the honey, soy sauce, herbs, and black pepper.

Dip the fish balls in the marinade and then leave to one side.
Pre-heat the oven to 200 ༠C/ 180 ༠C fan/375༠F/5 Gas.

Using a spiraliser, spiralise the courgette and cut into smaller strands.
Chop the yellow pepper, and add to the courgette spirals along with the bamboo shoots.

Stir in tomato paste, apple cider vinegar, and melted coconut oil into the leftover soy marinade, then use to stir fry the courgette mix.

At the same time, cook the fish balls in the oven for 15 minutes.

Stir the fish balls into the courgetti and serve.
