Cranberry and Orange Sauce

This is a classic cranberry sauce with a twist: orange, red wine, and port make a more complex sauce than simple cranberry and sugar.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 10 servings

Ingredients
450g fresh cranberries
3 tbsp orange juice
90ml red wine
80g sugar
60ml port

Method
Wash the cranberries and then put them into a saucepan.

Add the orange juice, red wine, sugar and port.

Bring the mixture to the boil and then simmer for about 10-15 minutes, stirring regularly.

The cranberries should all be burst and the sauce thickened.
The sauce will thicken more as it cools, and can be served straight away, or kept in the fridge for a few days and served cold.
