Biscotti is an Italian biscuit meaning 'twice baked' and have a lovely crunchy texture.

Makes: 36 servings
Ingredients
250g wholemeal plain flour
100g dried cranberries
100g stilton cheese
2 ½ tbsp Truvia sweetener (or 250g caster sugar)
2 tsp water
½ tsp baking powder
3 eggs
Method
Preheat the oven to 170 ༠C/ 150 ༠C fan/360 ༠F/5 Gas.
Crumble the stilton, then mix all the ingredients together to form a dough.
Divide the dough in two, and then roll into two logs.
Bake for 25 minutes and then allow the logs to cool slightly.
Slice each log into eighteen biscuits and then put back in the oven and bake for another 7 minutes on each side.
