Cream of Roasted Cauliflower Soup

This is my favourite cauliflower soup recipe. It's easy to make and tastes delicious. I always make a second batch so I have quick and easy ready made lunches.

Preparation Time: 30 minutes
Cooking Time: 10 minutes
Serves: 4

1 large cauliflower
4 cups vegetable or chicken stock
1/3 cup cream
olive oil
salt and pepper

Preheat oven to 200C and line a baking tray with baking paper.
Roughly cut the cauliflower into large florets and arrange it on the baking tray. Drizzle lightly with olive oil. Roast for 30 minutes or until golden.

Place the cauliflower, stock and cream into a blender and blend until smooth.
Transfer the soup to a saucepan, season with salt and pepper and add extra cream if desired. Heat over medium heat until the soup is heated through.


Note: You can reserve some of the roasted florets to use as a garnish when you serve your soup.
