Creamed Cream-free Kale

You know that feeling - you want to make creamy greens, but you're out of greens. Don't worry, you can still make a deliciously creamy dish with milk, butter, cheese and the right seasoning.



Preparation Time: 2 minutes
Cooking Time: 10 minutes
Makes: 2 servings

Ingredients
50g Curly kale
50g Cavolo nero
Chunk of extra mature cheddar cheese
Half tsp ground nutmeg
Half tsp ground cinnamon
Half tsp ground black pepper
Pinch of salt
Milk
Tablespoon butter
25g cheddar cheese

Method
Fry the spices for one minute with the oil in a pan over a medium heat.



Grate the cheese.



Add the kale to the pan, allow to cook for 2 minutes.



Add the milk and cook over a simmering heat for 5 minutes.



Add the cheese and simmer for a further 3 minutes.



The kale should have cooked down and wilted at this point.



Serve.



If you like, serve alongside any meat or vegetarian dish - this works particularly well with Lebanese-flavoured meat dishes.
