Ingredients 2 cups milk ¾ cup carrots, grated
2 - 3 tbsp sultanas (depending on how sweet you like it)
¼ cup coconut sugar (bit less if castor sugar)
1/8 tsp ground cinnamon
1/8 tsp ground cardamom
Bit of cream
1 - 2 tbsp cashews or pistachios
Put the milk in a heavy non stick saucepan over a medium heat.
Stir till it boils, turn down the heat to low, and leave it until it reduces to about half the original amount (this takes about 10 minutes). Make sure you stir it occasionally so it doesn't stick to the pan.
Add the carrot, sultanas, and cook a further 15 minutes.
Add the sugar, cinnamon, cardamom and cream and cook, stirring until the sugar dissolves.
Serve warm, and sprinkle with nuts.
Also great heated up in the microwave at a later time.
