Creamy Cauliflower Soup

Creamy without the calories, a delicious soup anyone would love!

Preparation Time: 25 minutes
Cooking Time: 25 minutes
Makes: 6


Ingredients
800 grams cauliflower, chopped
900 ml chicken stock
2 cloves garlic, crushed
1 brown onion, diced
1 tbsp olive oil
1 tbsp butter
50g cream
15 grams Dijon mustard
50 grams parmesan cheese, finely grated
pinch of salt and pepper

Method
Heat olive oil and butter in a soup pot.
Add salt, pepper, onion and garlic, fry until the onions are glassy.

Add cauliflower and continue to fry on low heat until golden, approximately 10 minutes.

Add chicken stock and bring to boil, allowing to simmer covered for 15 minutes until the cauliflower is soft.
Remove from heat and blend in a blender or with a stick blender until creamy.

Return to a low heat and stir in the cream.
Slowly add the parmesan and mustard, tasting as you go to achieve the desired taste, you can more if you desire.
Serve with some crusty bread!
