Creamy Courgettes

It looks pretty fancy and complicated, but this is the easiest creamy vegetarian dish I love to make on a weekly basis. Enjoy this with some brown rice/quinoa, or as a side dish for three people. Oh and it's packed with vitamins - winning dinner all round then.

Preparation Time: 5 minutes
Cooking Time: 20 minutes
Makes: 2 servings

Ingredients
2 red onions
7 wild mushrooms
1 courgette
Half an aubergine
2 garlic cloves
Half a tsp of The Alchemist's salt of the earth
50ml of double cream


Method
Chop all the vegetables.



Place the chopped in a saucepan with 2 tblsp of olive oil, stir and leave to cook on a medium heat for 5 minutes.



Add the remaining vegetables, leave on a medium heat for 15 minutes, stirring every 3 minutes.

Place the stock cube in 100ml of water allowing it to boil for 5 minutes.



Add to the creamy vegetables along with a pinch of the salt of the earth.



Stir, and leave to simmer for 5 minutes.



Dinner is served:
