This delicious creamy pasta is a family favourite and an easy meal to pull together on a busy weeknight. You can add as many veggies as you like as it is the perfect tasty sauce to hide a few extra serves of veg.
Ingredients ½ brown onion finely chopped
1 clove garlic crushed
½ cup parsley or coriander roughly chopped
½ red capsicum finely chopped
1 zucchini grated
30 g olive oil
400 g tinned tomatoes or 400g fresh tomatoes
300 mls water
200 ml cream
1 tablespoon Vegeta or stock
280 grams fettuccine
100 g thinly sliced salami
1 teaspoon chilli flakes
Place chopped onion, garlic, capsicum and oil in a saucepan and saute for three minutes or until softened.
Add grated zucchini and parsley/coriander and stir through.
Pour in tinned tomatoes, water, cream, stock and chilli flakes and cook for ten minutes, continually stirring until it comes to the boil and all flavours are combined. Turn down to medium heat.
Snap fettuccine in half and add to the saucepan along with the finely chopped Salami.
Return the stove to maximum heat and stir continually until the pasta is thoroughly cooked through (roughly ten minutes.)
