Creamy Pasta Salad

This is a variation of the standard salad. To give it an extra egde, dates and chorizo 'minitapas' is added on top and you have a great meal!


Cooking Time: 15 minutes
Makes: 3 servings

300g wholegrain pasta
1 chorizo
1 zucchini
2 tomatoes
1/2 package cream cheese
2-3 tsp pesto
1 avocado
10 dates

Cut the zucchini in thin slices, then cut the slices in four pieces.
Cut the chorizo in slices too, saving 10 slices for the 'minitapas', and cut the rest of the slices in four pieces.
Cut the tomoatos and avocado in pieces.
Take out the seeds out of the dates if they have some.



Put the wholegrain pasta in boiling water and boil it for about 10-12 minutes.
While the pasta is cooking you can start cooking the zucchini and add the chorizo pieces after about 6 minutes.
Add and mix the cream and let it sutter for a bit.


Put the avocado, tomatos, rocket and the cooked zucchini and chorizo in a bowl and mix it.
When the pasta is ready and the water is sieved out add some pesto and blend it.
To serve, put some pasta in a bowl and add the mixed veggies on top.

'Minitapas'; Put each date on one chorizo slice each and stick a toothpick through the dates into the chorizo - and you have tapas!

You can top your mixed salad with the tapas or have it on the side.
