Ingredients 1 medium capsicum
1 Lebanese cucumber
2 chicken breasts (optional - this recipe is equally tasty as a vegetarian meal)
1/2 packet pasta (shell pasta works best)
2 - 3 tablespoons light mayonnaise
Pepper to taste
Place pasta in a saucepan full of water and boil until soft.
Chop chicken, capsicum and cucumber into small, bite-sized chunks.
Cook chicken with a little oil in a pan until cooked through.
Mix pasta, chicken, capsicum, cucumber, mayonnaise and pepper together in a bowl.
