Creamy Pasta with Pumpkin, Feta and Spinach

Roast pumpkin and feta are a perfect combination of silky smooth texture and a salty kick in flavour. This dish is great for a lunch with friends or for taking on a picnic. Serve it warm or cold, sprinkled with your favourite toasted nuts. It works just as well with Gluten Free pasta!

Preparation Time: 15 minutes
Cooking Time: 25 minutes
Makes: 4 servings

Ingredients
250g spiral pasta - cooked as per packet instructions
400g pumpkin, skinned and cubed into 2cm pieces
1 tablespoon olive oil
100g soft Danish feta
130g packet baby spinach leaves
1 heaped tablespoon cream cheese
2 tablespoons pine nuts - toasted

Method
Preheat your oven to 180 degrees C
Line a small roasting tray with baking paper and spread pumpkin cubes over base. Drizzle with the olive oil and roast for 25 minutes. Allow to cool slightly.
Microwave the cream cheese until really soft (about 30 seconds on high) and stir through the cooked pasta.
In a 6 cup serving dish, layer the spinach, pasta, pumpkin pieces and crumbled feta.
Scatter the pine nuts over the top and then some ground black pepper if you like!
Tip: when serving, you can add a little French dressing to give it more flavour punch!
