Creamy Peas with Fenugreek

This is a creamy preparation that goes well with bread or naan. It uses green peas and fenugreek. Fenugreek is a herb widely used in indian and Mediterranean cuisine. The seeds are also used as a spice. Along with its culinary use, fenugreek has many health benefits.

Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 2-3 servings

1 cup chopped onion.
1/2 cup fenugreek leaves
8-10 cashews
1 green chili
2-3 garlic cloves
1/2 " piece ginger
1 cup green peas
Oil for cooking
1/2 cup pouring cream

Take little oil in a pan. Wash and cut fenugreek leaves. Fry them in the oil till they are wilted. This helps to reduce their bitterness. Keep aside.

Note the reduced quantity.

Make a paste of ginger, garlic, cashews and chili with water.

In the same pan fry the remaining onion, chopped fine. Saute till soft.

Add the ground paste and sauté till raw smell reduces.

Add the green peas and water.

When it is almost coming to a boil, add the fried fenugreek leaves.

Add some of the cream. If you do not wish to add cream, substitute it with milk.

Let it come to a boil. Keep stirring it till the gravy is thickened.

Switch off heat, cover and let it stand for few minutes.

Top it off with some cream.
