Creamy Salted Caramel Sauce

It's winter and indulging in comfort food is very hard to resist. So I stopped resisting and went all in to make this super rich and creamy salted caramel sauce to go with my ice-cream. Or if you are not up for an ice-cream, add a teaspoon of this sauce to your hot chocolate for a salted caramel chocolate drink. I have adapted this recipe from Donna Hay's salted caramel sauce recipe. Although I have never made caramel sauce before, it turned out pretty good.

Preparation Time: 5 minutes
Cooking Time: 10 minutes
Makes: 1 bottle

Ingredients
1 cup thickened cream
50 g salted butter
1 1/2 cups raw sugar
1/2 teaspoon sea salt
1/2 cup water
2 drops vanilla extract


Method
Heat the cream and butter in a pan till the butter melts. Keep aside

Mix the sugar and water in another pan and bring to boil.

Boil for 7-8 mins or till the mixture has a caramel colour.

Lower heat, add the cream and butter mixture, salt and vanilla extract.
Mix working quickly.
Boil for another 2 minutes on medium heat till the sauce thickens.

*Cool and store in an air tight container.
Refrigerate.
