Ingredients 400 gm potato (I used crème delight)
1 small brown onion
1 rasher bacon
160 ml cream
60 ml water
1 tbsp. parmesan (grated)
1 cup cheddar cheese (grated)
1 tsp dried oregano
2 garlic cloves (crushed)
Salt and freshly ground black pepper
Heat oven to 190c.
Peel potatoes and onion and slice very thinly, ideally on a mandolin. Slice the bacon into thin strips.
In a baking tray arrange 1/2 the onion, bacon, parmesan, oregano, garlic, salt and pepper then layer with 1/2 the potato. Repeat with the remaining 1/2 of these ingredients.
Finally pour the cream and water over the top of the potato. Top with grated cheddar and place in the oven for 30 minutes.
Test with a skewer to make sure potatoes are cooked through. The potatoes should be soft but still hold their shape.
