Creamy Spinach & Mascarpone Tagliatelle

The mascarpone is perfect for giving this dish a velvety smooth sauce and a little bit of goodness from the spinach to credit the double cream!



Preparation Time: 10 minutes
Cooking Time: 10 minutes
Serves: 2

Ingredients
250g tagliatelle
1 tsp butter
1 clove finely sliced garlic
1/4 nutmeg freshly grated
200g spinach
60g double cream
80g Mascarpone
75g grated Parmesan
Salt and pepper

Method
Boil the pasta as per packet instructions but retain some of the cooking water.
Fry the garlic and nutmeg in the butter.



Add the spinach to the pan and continue to cook until the spinach has wilted and excess moisture has cooked off.
Season well with salt and freshly ground pepper.
Add the cream, mascarpone and parmesan to the pan.
Add a few spoonfuls of the reserved cooking water from the pasta to loosen the sauce.



Add in the drained tagliatelle and mix through until it's fully coated in the sauce.
