Creamy Thyme Mushrooms

Beautiful rich and creamy mushrooms. This can be enjoyed as a side dish at breakfast or be turned into a pasta sauce for lunch or dinner.

Perfect Quick and Healthy Breakfast


Preparation Time: 5 minutes
Cooking Time:10 minutes
Makes: 2 servings

Fresh, Simple Ingredients.


Ingredients
For the Mushrooms
10 white mushrooms
1/2 red onion
Handful of fresh thyme
1 tbls olive oil
50g sweet chili cream cheese (plain is fine.)
Salt and Pepper

This Meal
2 slices of grain sourdough
4 free range poached eggs


Method
Slice the white mushrooms and add to a hot pot with the oil, saute.

Sauteed Mushrooms


Slice the red onion into thin semicircles.

Once the mushrooms have browned add the fresh thyme and red onion to the pot. Stir until warmed through.

Add the cream cheese and stir with a wooden spoon until the cheese has melted and covered your mushrooms.

I enjoyed these mushrooms as a side with two eggs and a slice of grain sourdough toast.

Delicious w Free Range Eggs


To enjoy as a pasta sauce double the recipe and serve with fettuccine.
